Chia Seed Pudding
Chia Seed Pudding (Serves 2):
1 Cup Unsweetened Non Dairy Milk
2 tbsp. Chia Seeds
1 Serving of Collagen or your favorite Plant Based Protein Powder
1 tsp. Vanilla Extract
1 tbsp. Refrigerated Full Fat Canned Coconut Milk (the hard part)
Mix all ingredients together. Remember to stir ingredients again after letting it sit for 20 minute. I say this because, it tends to get clumpy if you don't stir it a couple of times. Leave in the fridge overnight so the pudding can get nice and thick. Before serving/eating, top with blueberries and whatever else you enjoy! I sometimes like to add a little seed or nut butter and cacao nibs on top.
